Vegan Quinoa - How to make a quick and tasty quinoa dish with pesto
One of our favorite things about quinoa is that so many flavors go well with it. Orange Cherry Tomatoes and Apple Salad with Quinoa

Ingredients:
Keen One Jamaican Jerk Quinoa CupHandful of cherry tomatoes (any color works!)1 chopped apple1/2 chopped cucumber1/2 chopped yellow bell pepper3-4 broccoli florets (we lightly steamed ours!)1 serving of spring greensHomemade olive oil, black pepper, and sea salt dressing Directions:Cook quinoa cup according to directionsWash and chop veggies and lightly steam broccoli if desiredWe used homemade olive oil, black pepper, and sea salt salad dressing, but any type works for this simple saladLet quinoa chill and serve with saladEnjoy!
Pesto Pasta Veggie Bowl

Ingredients:1 Keen One Quinoa Pesto Pasta Quinoa Cup1 serving of baby kale1/2 medium-sized chopped carrot1/2 chopped cucumberAny color of bell pepper (we used red and yellow!)Substitute any veggies you'd like in this veggie bowlOlive oilBlack pepper Directions:Prepare quinoa cup according to directionsWash and chop veggiesMassage baby kale with olive oil and black pepperAdd veggies and quinoa on top
