Vegan Veggies Quinoa Bowl

Ingredients:

  • 1 lemon
  • 1 cup chopped asparagus
  • 1 cup chopped rainbow carrots
  • 1/2 cup chopped orange, yellow, and red bell peppers
  • 1 tbsp olive oil
  • 1 cup Keen One Thai Coconut Curry Quinoa
  • Salt and pepper to taste

Directions:
Roast asparagus and carrots in oven at 450 degrees Fahrenheit for 15 minutes with olive oil and lemon juice. Cook Keen One cup according to package directions. Add all ingredients to bowl and enjoy!
