Sweet Potato and Chipotle Quinoa Salad

 Sweet Potato and Chipotle Quinoa Salad

Ingredients:

  • 1 sweet potato
  • 2 cups sliced kale
  • 1/4 tsp garlic powder
  • 2 tbsp olive oil
  • 1/8 tsp Himalayan salt
  • 1/4 cup sliced walnuts
  • 1/2 tsp honey
  • 2 tbsp cranberries
  • 1 Cup Keen One Chipotle Quinoa

Directions:

Heat 1 tbsp olive oil in a sauce pan and cook kale until lightly steamed. Remove from pan and set aside. Add honey and walnuts to pan and heat until lightly brown. Remove walnuts and set aside. Slice sweet potato into 1/4 inch chunks and spread evenly across a parchment paper or foil lined baking sheet. Drizzle 1 tbsp olive oil and Himalayan salt over the cut sweet potato slices. Bake for 20 minutes at 400 °F or until golden brown. Cook Quinoa cup according to package directions. Toss kale with the walnuts, cranberries, sweet potatoes and quinoa. Enjoy!
