Sautéed Yellow Squash and Zucchini with Chipotle Quinoa

Ingredients:

  • 1 small zucchini
  • 1 small yellow squash
  • 1/2 tsp dried onion
  • 1/2 tsp garlic powder
  • 1 cup Keen One Quinoa Chipotle flavor
  • 2 tbsp olive oil
  • Salt and pepper to taste

Directions:
Cook quinoa cup according to package directions. Slice yellow squash and zucchini into 5mm pieces horizontally. Heat olive oil in a medium pan and add salt, pepper, dried onion and garlic powder. Once oil is heated add the squash and zucchini slices and cook for 5 minutes or until tender. Remove from pan and add quinoa. Enjoy!
