Ingredients:
- 2 cups of Keen One Original Quinoa
- 1 medium sweet or yellow onion, diced
- 3 garlic cloves
- 1 1/4 cup salsa verde
- 1 (15 oz.) can pinto beans, undrained
- 1 (15 oz.) can great northern beans, undrained
- 1 (15 oz.) can navy beans, undrained
- 4 cups vegetarian or chicken broth
- 1/4 teaspoon oregano
- Shredded chicken or pork (optional)
- Optional toppings: fresh lime juice, fresh cilantro, jalapeño, avocado, tortilla chips
Directions:
- Add all the above ingredients to a crockpot and cook for 3 hours
- Viola! Serve hot with additional toppings
