Vegan Curry Quinoa Tacos

Ingredients:
Keen One Thai Coconut Curry Quinoa Cup
Tortillas
1 can coconut milk
1/4 tsp turmeric
1/2 tsp curry powder
1/4 tsp red pepper powder
Black pepper
Salt
Shredded lettuce
Chopped tomatoes
Chopped bell peppers
 Directions:
Cook quinoa cup according to directions
Bring coconut milk to boil and add spices and desired amount of salt
Mix until even
Warm tortilla and spoon quinoa and curry in
Add vegetables and any wanted toppings on top

Chopped red and yellow bell peppers
 
Directions:
Prepare quinoa cup according to directions
Drain tofu well and mash together with quinoa in a bowl
Place tofu and quinoa mixture into yubu tofu pockets
Add chopped bell pepper pieces for decoration and texture
