Edamame "Keenthusuast" Spring Rolls


Edamame Sushi Spring Rolls
Fresh Recipe in from one of our Awesome Keenthusiast!
-  1cup of edamame sushi quinoa
-  cucumber (about half)
-  shredded carrots 
-  fresh cilantro 
-  lettuce 
-  avocado
-  2 sweet mini peppers
-  Vietnamese spring roll wrappers 
Fill a bowl with warm water. Dip one wrapper into the water  for about 1-2 seconds to soften. Lay wrapper flat. Place cucumbers, cilantro, lettuce, two spoons of edamame sushi quinoa, avocado, and a handful of shredded carrots and sweet peppers. Fold sides, then tightly roll the wrapper. Repeat with remaining ingredients. One quinoa cup makes about 4-5 servings.
