Quinoa and Veggie Platter

Ingredients:

Sliced carrots
Sliced cucumbers
Sliced bell peppers
Broccoli
Cherry tomatoes 
Sliced avocados 
Vegan cashew dressing

Directions:

Prepare quinoa cup according to directions. Have fun mix and matching your favorite veggies, and add vegan cashew dressing to quinoa to make the flavors pop!

Sweet Potato Quinoa Bowl

Ingredients:

1 to 2 (depending on the size) steamed sweet potatoes
1 cup boiled adzuki beans or black beans
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
1/4 cup chopped carrots
1/2 cup brown rice/ cauliflower rice/ shredded cabbage
(we used cauliflower rice in this recipe, but feel free to replace with rice or other veggies)
Keen One Pesto Pasta Quinoa Cup (all flavors work wonderfully!)
 
Directions: 
Prepare quinoa cup according to directions.
Lay base of brown rice, cauliflower rice, or other veggies into bowl.
Personalize your bowl with desired amount of beans, bell peppers, carrots, and sweet potato.
Top with Keen One Quinoa.
