Ingredients:
Keen One Chipotle Quinoa Cup
4 cups romaine lettuce, chopped
2 green onions, sliced
1/2 cup red cabbage, chopped
Fresh cilantro (desired amount)
1/2 cup carrots, sliced thinly
1/2 cup black beans
1/2 cup corn (roasted or unroasted)
1/2 lime
Tomatillo dressing
Tortilla strips
Directions:
Prepare Chipotle Quinoa Cup according to directions
Chop and prepare veggies
Add corn, beans, and drizzle tomatillo dressing
Add desired amount of tortilla strips on top to add crunch
