🌶️Spicy Bok Choy with Tofu and Quinoa🥬
Ingredients:
2 Tbs. vegetable broth
1 Tbs. chili sauce
2 tbs. soy sauce
1 tsp. cornstarch
2 tbs. peanut or vegetable oil
1 tbs. minced ginger
2 tsp. minced garlic
1/2 tsp. salt
4 cups baby bok choy, trimmed and halved length
1 large bell pepper, cut into 1/2-inch strips
1/2 cup cubed tofu
Directions:
Prepare Garden Medley Quinoa cup
Combine vegetable broth, chili sauce, soy sauce, and cornstarch in bowl
Stir-fry oil, ginger, and garlic then add tofu
Sprinkle salt, add the sauce, then add bok choy and bell peppers
Stir fry until cooked
Serve with quinoa, add extra sriracha if desired, and enjoy❤️
