Ingredients:
- 1 cup Keen One Garden Medley Quinoa
- 2 tbsp olive oil
- 1 medium spaghetti squash
- Salt and pepper to taste
Directions:
Cook quinoa cup according to package directions. Slice spaghetti squash into 1 inch pieces and seed. Place on a foil lined baking sheet and sprinkle with olive oil and salt and pepper. Cook at 400 degrees Fahrenheit for 25 minutes or until tender. Pull apart with a fork. Place quinoa inside. Enjoy!
