Directions: Preheat oven to 400 degrees Fahrenheit. Cook quinoa cup according to package directions. Chop potatoes into forths and place on a baking sheet. Sprinkle with olive oil and salt and pepper. Cook for 20 minutes. Add chopped bell peppers, carrots, and green beans and cook for an additional 15 minutes. Remove from oven. Enjoy!
