Quinoa Salad with Garbanzo Beans, Tomatoes and Cilantro

Ingredients:

  • 1 Pack of Keen One Original Quinoa
  • 1/2 Cups of Cilantro, Chopped
  • 1 Can of Garbanzo Beans, Drained
  • 1 Lemon, Juiced
  • 1/4 Cup Balsamic Vinegar
  • 1/4 Cup Dijon Mustard
  • 1/4 Cup Olive Oil
  • 3/4 Cups Tomatoes, Chopped
  • 1 Garlic Clove, Minced
  • 1/2 tsp Oregano
  • 1 tsp Chilli Powder
  • 1/4 tsp Cayenne Powder
  • 1 1/2 tsp Cumin

Directions:

  1. Preheat the oven to 400 degrees for the garbanzo beans
  2. Season and bake the garbanzo beans for about 30 minutes or until baked throughly
  3. While the garbanzo beans are cooking, cook the Keen One Original Quinoa according to package directions
  4. Whisk balsamic, olive oil, dijon, and lemon together for the dressing; add garlic, cumin, oregano, chili powder and cayenne
  5. Stir together the quinoa, beans, tomatoes, lime juice and cilantro. Season to taste with salt and pepper, and enjoy!
