Quinoa Recipes - How to make a quick and tasty quinoa dish with pesto

One of our favorite things about quinoa is that so many flavors go well with it. One of our recipes were inspired by colorful orange cherry tomatoes we found at the store, and we thought they'd make a great colorful salad! Orange Cherry Tomatoes and Apple Salad with Quinoa

Ingredients:
Keen One Jamaican Jerk Quinoa Cup
Handful of cherry tomatoes (any color works!)
1 chopped apple
1/2 chopped cucumber
1/2 chopped yellow bell pepper
3-4 broccoli florets (we lightly steamed ours!)
1 serving of spring greens
Homemade olive oil, black pepper, and sea salt dressing
 
Directions:
Cook quinoa cup according to directions
Wash and chop veggies and lightly steam broccoli if desired
We used homemade olive oil, black pepper, and sea salt salad dressing, but any type works for this simple salad
Let quinoa chill and serve with salad
Enjoy!

Pesto Pasta Veggie Bowl

Ingredients:
Keen One Quinoa Pesto Pasta Quinoa Cup
1 serving of baby kale
1/2 medium-sized chopped carrot
1/2 chopped cucumber
Any color of bell pepper (we used red and yellow!)
Substitute any veggies you'd like in this veggie bowl
Olive oil
Black pepper
 
 
Directions:
Prepare quinoa cup according to directions
Wash and chop veggies
Massage baby kale with olive oil and black pepper
Add veggies and quinoa on top

Serve with garlic toast for extra flavor and enjoy!
