Chipotle Quinoa Stir Fry
Keen One Chipotle Quinoa Cup
1/2 Red bell pepper, chopped
1/2 Yellow bell pepper, chopped
1 Onion, chopped
Chopped brown mushrooms
Diced cherry tomatoes
Himalayan sea salt
Cracked black pepper
Grape seed oil
Cook quinoa cup according to directions
Stir fry chopped bell peppers, mushrooms, and onion with grape seed oil.
Add desired amount of salt and pepper
Serve with quinoa, chopped cherry tomatoes, and plant based shredded cheese
