Quinoa Recipes - Chipotle Quinoa Stir Fry

As we've mentioned in our previous blogs, stir frying is one of our favorite quick and simple cooking methods! Here is another great flavor match for various veggies featuring our Chipotle Quinoa Cup.

 

Chipotle Quinoa Stir Fry


Ingredients:
Keen One Chipotle Quinoa Cup
1/2 Red bell pepper, chopped
1/2 Yellow bell pepper, chopped
1 Onion, chopped
Chopped brown mushrooms
Diced cherry tomatoes
Himalayan sea salt
Cracked black pepper
Grape seed oil

Directions:
Cook quinoa cup according to directions
Stir fry chopped bell peppers, mushrooms, and onion with grape seed oil.
Add desired amount of salt and pepper
Serve with quinoa, chopped cherry tomatoes, and plant based shredded cheese
