- 2 bell peppers (one orange and one red)
- 1 sweet potato
- 1 cucumber
- 1 cup Keen One Edamame Sushi Quinoa
- 2 tbsp olive oil
- Salt and Pepper to taste
Preheat oven to 425 degrees Fahrenheit. Chop sweet potato into 1/8 pieces and place on foil lined baking sheet. Sprinkle with olive oil and salt and pepper. Bake for 25 minutes or until tender and golden brown. Add chopped cucumber and seeded bell peppers. Cook Keen One Quinoa Cup according to package directions. Enjoy!
