Lemon Zest Quinoa Beet Dish

Ingredients:


Directions:

  1. Preheat oven to 375° F
  2. Cut skin away and dice the beets
  3. Lightly coat beets in oil and roast for about 45 minutes
  4. Remove and let cool
  5. Cook Keen One Original Quinoa to package directions 
  6. Juice the lemons into the quinoa 
  7. Add beets
  8. Dice mint into the dish 
  9. Grade the lemon zest into the dish for garnish and enjoy!
