Kale Quinoa Buddha Bowl

Ingredients:

  • 1 Keen One Garden Medley Quinoa Cup
  • 2 cups of fresh kale, rinsed, stems removed, and chopped
  • 1 avocado, pitted and sliced
  • 1/2 cup of canned chickpeas, drained
  • 1 tsp chia seeds
  • 2 Tbsp plain yogurt
  • 1 tsp Sriracha
  • 1 lime, juiced

Directions:

  1. Prepare Keen One Garden Medley Quinoa cup according to directions on package.

  2. In a small bowl, mix plain yogurt with Sriracha and lime juice and set aside.

  3. To assemble your buddha bowl, add quinoa, chickpeas, kale, and avocado to a medium bowl. Drizzle everything with the dressing mixture, sprinkle with chia seeds and enjoy!
