- 1 cup Keen One Jamaican Jerk Quinoa
- 1 cup fresh spring greens
- 1 cup spinach
- 1/4 cup chopped tomato
- 1/2 tbsp coconut oil
Cook Keen One cup according to package directions. Sauté quinoa with tomato and spinach until spinach is wilted. Rinse off spring greens and place as a base in a bowl. Add the quinoa mix. Enjoy!
