Delicious Spring Salad brought to you by our Fearless VP of Sales, David Wemple aka THE QUINOA GUY!...though lets get real, his lovely wife is the brains behind this tasty creation.
Total Prep ~40 minutes*
1/2 Cup of Tricolor Quinoa (Dry)
1/4 Cup Pickled Red Onion
~4 cups of lettuce or mixed greens
1/4 Cup of Tomato, Chopped
1/4 Cup of Croutons
Shredded Drunken Goat Cheese
Salt & Pepper to Taste
1. Pickle onions in 1/2* cup of balsamic vinegar and leave over night*
or use this online cooking recipe or buy some from the store!
2. Bring one cup of water or stock to a boil and add dry quinoa. Bring back to a boil, stir, and let cook for 15 minutes. Remove from heat and cool.
3. Dice remaining vegetables and mix with lettuce and toss in large bowl.
4. Once cool, add quinoa along with dressing and salt & pepper to taste!
5. Viola! Enjoy!!
