Edamame Sushi Quinoa Pinwheels


  • 1 Edamame Sushi Keen One Quinoa Cup
  • 1 large flour tortilla
  • 2-3 Tbsp. cream cheese or hummus
  • 2 handfuls of baby spinach, de-stemmed
  • 1/2 cucumber, peeled and thinly sliced


  1. Prepare Edamame Sushi Quinoa Cup according to directions on package. Allow to cool for 5-10 minutes.

  2. Lay tortilla flat and spread an even layer of cream cheese/hummus over the entire surface. Pour out contents of the quinoa cup over the cream cheese*, and spread evenly over the entire surface. Repeat process, arranging a layer of spinach over the quinoa. Add a layer of cucumbers and roll up the tortilla tightly. Slice, plate and serve!
