Ingredients:
- 1 can black beans
- 1 can corn
- 1 cup cherry tomatoes, quartered
- ½ cup fresh cilantro, chopped
- Cilantro and avocado to garnish
Dressing:
- 1 lemon, squeezed
- ½ lime, squeezed
- ¼ cup lemon juice
- ¼ cup olive oil
- Salt and pepper to taste
Directions:
- Drain and rinse canned black beans and corn
- Quarter cherry tomatoes
- Remove fresh cilantro from stem and chop
- Make dressing by squeezing the lemon and lime into a bowl. Add lemon juice, olive oil, and season with salt and pepper.
