Ingredients:
- 1 Chipotle Quinoa Cup
- 2 small bell peppers (red, orange, yellow)
- 1/4 cup chopped cilantro
- 1/2 cup queso fresco
Directions:

Prepare Chipotle Quinoa Cup according to directions on package. Allow to cool for 5-10 minutes.

Heat oven to 375. Cut peppers in half and clean out the seeds and steam carefully.
- Mix Chipotle quinoa cup with half of the queso fresco and cilantro, till even. Stuff mixture into pepper boats and top with remaining queso fresco. Place on a pan and cook for 10-15 minutes in the oven, or till the peppers begin to char.
- Remove from the oven and garnish remaining cilantro on top. Serve up and enjoy!
