Prepare Chipotle Quinoa Cup according to directions on package. Allow to cool for 5-10 minutes.
Heat oven to 375. Cut peppers in half and clean out the seeds and steam carefully.
Mix Chipotle quinoa cup with half of the queso fresco and cilantro, till even. Stuff mixture into pepper boats and top with remaining queso fresco. Place on a pan and cook for 10-15 minutes in the oven, or till the peppers begin to char.
Remove from the oven and garnish remaining cilantro on top. Serve up and enjoy!
