Keen One Chipotle Quinoa and Casa Alavarez Chile Verde Enchiladas!
Prep Time ~20 minutes - Feeds 2
Keen One Chipotle Quinoa Cup
2 Cups Casa Alvarez Chile Verde ( Vegetarian)
1 Cup of Daiya Shredded Cheese ( Regular Cheese of your liking optional)
4 x 8-10" Tortillas ( we recommend Whole Wheat!)
2 Crimini Mushrooms
Tsp of Olive Oil
Lime + Avocado for Garnish * Optional
Preheat oven to 400 Degrees and Grease Pan with Olive Oil
Cook Chipotle Quinoa Cup per instructions
Add 1/4 Cup of Cihle Verde to Cup or mix in separate bowl
Add 1/2 Cup of Shredded Cheese
Add Diced mushrooms
Stir all together
Fill each tortilla with ~3/4 Cup of filling and roll up and place in oven safe pan
Top with remaining ~1 3/4 Cups of Green Chile or feel free to add as much or little to top as you like!
Bake for 10 minutes at 400 degrees.
Remove and add remaining 1/2 cup of cheese or more to top and broil on low for 3-4 minutes checking until melted and looking delicious!
