Cauliflower Harissa Hummus Wrap

Spring Harissa Red Pepper Hummus Wrap

Prep time ~20 minutes

Ingredients

Harissa Red Pepper Quinoa Cup

1/2 Head of Cauliflower ( ~2 cups)

Hope Red Pepper Organic Hummus

Avacado

2 Tortillas

Cilantro

~1 Tablespoon of Olive Oil

Hummus Wrap Ingredients

Directions:

Preheat Oven to 425 Degrees

  1. Dice cauliflower and toss with olive oil and Salt and Pepper to taste. Roast for 15 minutes. Take out and cool for 4-5 minutes.
  2. Cook Harissa Quinoa Cup per Directions of Choice
  3. Smear Hummus on tortilla, add quinoa, add cauliflower, add sliced avocado and diced cilantro.
  4. Wrap up and enjoy!!
