Spring Harissa Red Pepper Hummus Wrap

Ingredients
Harissa Red Pepper Quinoa Cup
1/2 Head of Cauliflower ( ~2 cups)
Hope Red Pepper Organic Hummus
Avacado
2 Tortillas
Cilantro
~1 Tablespoon of Olive Oil
Directions:
Preheat Oven to 425 Degrees
- Dice cauliflower and toss with olive oil and Salt and Pepper to taste. Roast for 15 minutes. Take out and cool for 4-5 minutes.
- Cook Harissa Quinoa Cup per Directions of Choice
- Smear Hummus on tortilla, add quinoa, add cauliflower, add sliced avocado and diced cilantro.
- Wrap up and enjoy!!
