Ingredients:
- 2 tbsp olive oil
- 1 butternut squash
- 1/2 tsp paprika
- 1 tbsp vegan butter

1 Keen One Jamaican Jerk Quinoa Cup
- Salt and Pepper to taste
Directions:
Preheat oven to 420 degrees Fahrenheit and cut the butternut squash in half horizontally. Peel and seed the squash. Cover the squash halves in olive oil and salt and pepper. Bake for 25 minutes on a baking sheet lined with parchment paper. Remove from oven and let cool. Make 3 mm slices into squash and brush with melted butter and paprika. Bake for another 10 minutes or until soft. Cook quinoa cup according to package directions. Enjoy!
