Ingredients:
- 1 Artichoke
- 1 cup Keen One Harrisa Red Pepper Quinoa
- 1 tsp vegan butter
- 1/4 tsp salt
- 1/4 tsp pepper

2 tbsp lemon juice
Directions:
Cut off stem and top 1/4 inch of artichoke and boil in a large saucepan for 25 minutes or until the bottom leaves are easy to pull off. Let artichoke cool. Cut into 4 sections, scoop out artichoke heart and set aside. Cook Harrisa Quinoa Cup according to package directions. Sprinkle lemon juice, vegan butter, salt and pepper on artichoke. Enjoy!
