Ingredients:
- 1 tbsp olive oil
- 1 acorn squash
- I cup Keen One Harissa Red Pepper Quinoa Cup

Salt and Pepper to taste
Directions:
Preheat oven to 375 degrees Fahrenheit. Cut acorn squash in half vertically and scoop out seeds. Rub cut sides with olive oil and sprinkle with salt and pepper. Place on a parchment paper lined baking sheet, cut side up. Bake for 30-40 minutes or until tender. Enjoy!
