In a 24 oz. glass mason jar, add 2-3 tablespoons of the dressing of your choice as the first layer of the salad.
In a separate bowl, stir together the tomato, cucumber, bell pepper and red onion; add as the second layer.
Prepare the Keen One Quinoa cup according to package directions, and add to the jar as the third layer.
Next, mix together the peas, broccoli, corn, carrot and celery; add as the fourth layer.
Add in chopped greens as the fifth layer. Top with cheese (optional) and replace mason jar top. Refrigerate for a healthy lunch or dinner during the week!
