6 Layer Quinoa Salad Jar


  • Salad dressing of choice
  • 1 ripe tomato, diced
  • 1 large cucumbers, peeled and diced
  • 1/2 red onion,  diced
  • 1 bell pepper,  seeded and diced
  • 1 Harissa Red Pepper Keen One Quinoa Cup, prepared
  • 1/4 cup of peas
  • 1/4 fresh broccoli, chopped 
  • 1/4 cup corn, cooked and drained
  • 1 carrot, peeled and diced
  • 1 celery stalk, diced
  • 1/4 cup greens of choice, rough chopped 
  • optional: 1/4 cup shredded cheddar cheese (excluded for vegan, or use vegan alternative)


  1. In a 24 oz. glass mason jar, add 2-3 tablespoons of the dressing of your choice as the first layer of the salad.

  2. In a separate bowl, stir together the tomato, cucumber, bell pepper and red onion; add as the second layer.

  3. Prepare the Keen One Quinoa cup according to package directions, and add to the jar as the third layer.

  4. Next, mix together the peas, broccoli, corn, carrot and celery; add as the fourth layer.

  5. Add in chopped greens as the fifth layer. Top with cheese (optional) and replace mason jar top. Refrigerate for a healthy lunch or dinner during the week!
