Ingredients:

vegan Thai green coconut curry
cubed tofu
roasted cauliflower
shredded carrots
lime wedge
toasted coconut shavings
mixed greens
mango chutney
cilantro chutney
Directions:
Boil liquid curry ingredients in pan and add tofu until flavors mix
Prepare quinoa cup according to directions
Place quinoa in a bowl and pour curry over quinoa
Add desired toppings such as veggies, chutney, or recreate our combination!

🔥Spicy Veggie Ramen with Quinoa, Tofu, and Mushrooms🍜
Ingredients:
Keen One Quinoa Garden Medley Cup
Cubed tofu
Chopped brown mushrooms
Ramen noodles
Vegetable stock
Miso paste
Ground garlic
Chili oil
Avocado oil
Turmeric
Sprouts
Chopped green onion
Sriracha
Dried seaweed flakes
Directions:
Prepare quinoa cup according to directions
Pan fry tofu and mushrooms with turmeric, avocado oil and chopped garlic
Bring vegetable stock to boil in pot and stir in miso paste and garlic
Cook ramen noodles separately
Place quinoa in bowl with noodles on top, then pour broth over
Add desired amounts of tofu, mushrooms, sprouts, green onion, and dried seaweed
Add spice with chili oil and sriracha
