This month's featured ingredients are tortillas! Tortillas can be found at many grocery stores and farmer's markets, and you can even make your own at home. You can choose from a variety of types such as wheat, flour, and corn for these recipes, and there are also gluten-free tortillas! Tortillas are easy to cook with, and you'll be surprised at how easy it is to incorporate our quinoa cups.
For our first recipe, we made quesadillas using our Keen One Chipotle Quinoa Cup! Adding quinoa to your quesadillas may be unexpected, but we were so surprised at how well they turned out! The spices from our quinoa cup go perfectly with this dish.
Keen One Chipotle Quinoa Quesadillas
Ingredients:
Keen One Chipotle Quinoa Cup
Diced white onions
Avocado oil
Plant-based shredded cheese (or regular shredded cheese if you prefer)
Cooked black beans
Salsa
Guacamole
Directions:
Prepare quinoa cup according to directions
Stir fry diced white onions with avocado oil until slightly brown and set aside
Heat up tortilla in pan
Add cheese, black beans, onions, and Chipotle Quinoa to tortilla and fold in half once melted
Serve with salsa, guacamole and any additional desired toppings
Pesto Quinoa Tortilla Pizza
Ingredients:
Keen One Pesto Pasta Quinoa CupAny size tortilla (depends on how big you want your personal pizza to be!)
Tomato sauce
1-2 chopped tomato
1/2 chopped bell pepper
1/2 sautéed onion
1/4 cup sautéed brown mushroom
1 tbsp avocado oil
plant-based cheese (optional)
fresh basil (optional)
red pepper flakes (optional)
Directions:
Cook quinoa cup according to directions
Wash and chop tomatoes, pepper, onion, and mushrooms
Sauté mushrooms and onions pan with avocado oil and set aside
Heat up both sides of tortilla in pan
Spread thin layer of tomato sauce and add all desired toppings with quinoa
After ingredients are hot and melted, carefully slide tortilla off of the pan, and you're done!
