Memorial Day was first designated a holiday after the Civil War to remember and honor the countless sacrifices made by our military personnel and their families. The selfless actions of the men and women who defend this country and the freedoms we hold dear must never be forgotten.
We celebrate those sacrifices by the most American of traditions, grilling! Here is a fantastic quinoa burger for your meatless Memorial Day celebrations. And when you are enjoying time today with friends and family think of the service men and women who fight to make our lives better.
Garden Medley Quinoa Burger
2 Bags Garden Medley Quinoa
2 Cups Vegetable Stock
1/2 Cup Tomato Sauce
2 Leaves of Kale (Chopped Fine)
1 Tbsp Fresh Thyme (Chopped)
1 Tbsp Fresh Oregano (Chopped)
1 Tbsp Tomato Paste
1 Cup Mushrooms
2 Tbsp Olive Oil
Salt & Pepper to Taste
1. Place Garden Medley Quinoa, vegetable stock, tomato sauce, kale, thyme & oregano in pot on stove over high heat and bring to a boil. Then turn heat to low, cover and simmer until liquid is absorbed (10 - 12 minutes).
2. Remove from heat and thoroughly stir in egg, tomato paste and mushrooms and season with salt & pepper. Set aside until cool enough to handle.
3. Once quinoa has cooled form into patties.
4. Place over high to medium heat on grill (or skillet) and cook 4 - 5 minutes on each side.
